Margarita Lime Chicken

Baba is visiting us for the Thanksgiving holiday. I planned a delightful menu to display my mad culinary skills. I started with sausage cheese muffins from Pinterest, made a whole Thanksgiving dinner, and tonight "Margarita Lime Chicken"! Everything was delicious! I thought I would share this yummy recipe, courtesy of my friend, Ashley F.


Ingredients:

2 chicken breast
1 small bag Mahatma yellow rice
1 can black beans
1/2 cup fresh salsa, drained
2 tostadas
1 packet powder margarita mix
1 lime
kosher salt to taste
shredded cheese


Sauce ingredients:
1/2 cup sour cream
1/4 cup ketchup
2 Tbsp hot sauce
2 tsp taco seasoning
1 tsp horse radish
juice of 1/2 a lemon

Directions:

Cook rice according to package directions.
Heat black beans in sauce pan, drain before serving.
Mix ingredients to make sauce in small bowl.
Set aside.
Grease skillet with olive oil or butter.
Place chicken in skillet and season with kosher salt, lime juice, and sprinkle with margarita mix to evenly coat.
Sear chicken on both sides, seasoning other side when turned over.
Cook to desired temperature.
To plate: Spoon bed of rice onto plate, then layer with: drained beans, shredded cheese, chicken, tortilla chip, Drizzle with sauce and top with spoonful of drained salsa.
